This Friday at 3 PM, a very special re-opening will take place in Hillsboro, Oregon.  That is the date and time that Jim’s Ice Cream will make its triumphant return and start dishing up the best ice cream and treats in the region!  This is an awesome development for Hillsboro, for owner Adrian Wakefield and her family, and the historical business district along 10th Avenue.  With tough times hitting everyone, the chill of immigration arrests, and other bad news in the air – well, this is one of those great comeback stories that just feels good!  It has been a year since a driver plowed into the front of this legacy ice cream shop, delivering a knockout blow.  But with some help from the community via a GoFundMe, some real grit, and determination, Jim’s is back!

Now, beyond the ice cream, the specialty cakes, and the holiday goodies, Adrian, the shop’s owner, came up with the Chocolate Bomb.  I can only describe it as pure chocolate ecstasy.  The winter weather and holidays are no match for this mighty chocolate force – drop one in a cup, add hot milk, and see what happens!  These are so good and a real Holiday treat!
